Carrot Cake

This is one of my fav recipes and I’ve been craving this lately. Must be the time of year. After all Easter is around the corner. Nobody made this better than my grandmother. Must have been all the love she poured into it. Enjoy!

Carrot Cake

2 cups flour
½ cup oil
2 cups sugar
4 eggs, beaten together
2 tsp. soda
2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
3 cups grated carrots
½ to 1 cup pecans
1 tsp. vanilla

Cream sugar and oil until fluffy. Add eggs; cream well. Sift dry ingredients and add to first mixture. Fold in carrots and nuts. Bake at 300 degrees for 30 to 40 minutes. Makes 4 layers in heavily oiled and floured pans.

Icing:

1 box powdered sugar
8 oz. cream cheese
½ stick butter
2 tsp. vanilla

Blend all together and spread on cool cake.
