This is one of my favorite desserts. If you have a few apples that might be past their prime or fresh apples, then chop them up for this recipe.
Apple Cake
2 cup sugar (1 brown, 1 white)
1 ½ cup oil
3 eggs
3 cup flour
1 ½ tsp. soda
½ tsp. salt
½ tsp. cinnamon
½ tsp. cloves
1 tsp vanilla
3 cup finely sliced, raw, peeled apples
Mix sugar, oil, and eggs. Add dry ingredients, then add vanilla and fold in apples. Bake in a greased and floured Bundt pan at 350 degrees about 1 ½ hours or until golden brown on top.
Icing:
1 cup powdered sugar
Juice of 1 lemon, strained
Pour over warm cake.
